Ingredients

  • 600 g cod loins
  • 1 tsp ground turmeric
  • 6 dried red chillies
  • 4 shallots
  • 2 garlic cloves
  • 1 tbsp tamarind paste
  • 1 tsp palm sugar
  • 150 ml vegetable oil for frying

Method

  1. 1

Rub the cod loins with the ground turmeric and a little salt.

  2. 2

Heat the vegetable oil in a frying pan and fry the fish for 3-4 minutes per side until golden and the flesh flakes easily. Lift out and keep warm.

  3. 3

Blend the dried red chillies, shallots and garlic to a paste.

  4. 4

Fry the paste in 2 tablespoons of the fish's frying oil for 7-8 minutes, stirring often, until darkened, then stir in the tamarind paste and palm sugar and cook for 2 more minutes.

  5. 5

Spoon the sambal over the fried fish and serve with steamed rice.
