Honey and Soy Glazed Salmon Traybake

Ingredients

  • 4 salmon fillets
  • 250 g tenderstem broccoli
  • 500 g baby new potatoes
  • 3 tbsp soy sauce
  • 2 tbsp clear honey
  • 2 clove garlic cloves
  • 1 tbsp sesame oil
  • 1 tbsp sesame seeds

Method

    Preheat the oven to 200°C (fan 180°C). Halve any larger new potatoes, toss with a drizzle of oil and spread across a large roasting tray. Roast for 15 minutes.

    Mix together the soy sauce, honey, crushed garlic and sesame oil in a small bowl to make the glaze.

    Add the tenderstem broccoli to the tray with the potatoes and nestle the salmon fillets on top.

    Spoon the glaze generously over the salmon and drizzle any remainder over the vegetables.

    Return to the oven and bake for 12–15 minutes until the salmon is cooked through and the glaze is sticky and caramelised.

    Scatter with sesame seeds and serve straight from the tray.
