Halloumi and Prawn Skewers with Honey and Chilli

Ingredients

  • 400 g raw king prawns, peeled
  • 250 g halloumi
  • 2 red pepper
  • 2 tbsp runny honey
  • 0.5 tsp chilli flakes
  • 1 lemon
  • 1 tsp dried oregano
  • 2 tbsp olive oil

Method

    Cut the halloumi into 2cm cubes and the red pepper into similar-sized pieces.

    Mix the honey, chilli flakes, lemon juice, oregano, and olive oil in a bowl. Add the prawns, halloumi, and pepper pieces and toss well to coat.

    Thread alternating pieces of prawn, halloumi, and pepper onto 8 metal or pre-soaked wooden skewers.

    Cook on a hot griddle pan or under a preheated grill for 3–4 minutes per side until the halloumi is golden and the prawns are pink and cooked through.

    Serve immediately with a squeeze of lemon, warm flatbreads, and a simple cucumber and tomato salad.
