  • 600 g chicken breast fillets
  • 2 lime
  • 1 tsp chilli flakes
  • 1 tsp ground cumin
  • 3 mixed peppers
  • 1 red onion
  • 8 flour tortillas
  • 20 g fresh coriander
  • 2 tbsp sunflower oil

Method

    Slice the chicken breasts into strips and toss with lime juice, chilli flakes, cumin, oil, salt, and pepper. Leave to marinate for at least 15 minutes.

    Slice the peppers and red onion into thin strips.

    Heat a large griddle or frying pan over a high heat. Cook the chicken strips for 4–5 minutes until charred and cooked through. Remove and set aside.

    Add the peppers and onion to the same pan and cook for 5 minutes until softened and lightly charred.

    Return the chicken to the pan, toss together, and squeeze over the remaining lime juice.

    Warm the tortillas and serve with the chicken and pepper filling topped with fresh coriander.
