Griddled Halloumi-Style Tofu Street Taco Bowl
Ingredients
- 400 g extra firm tofu
- 2 tbsp soy sauce
- 1 tsp smoked paprika
- 2 lime
- 300 g long grain white rice
- 400 g tinned black beans
- 1 ripe mango
- 1 red chilli
- 20 g fresh coriander
- 2 tbsp sunflower oil
Method

Press the tofu firmly, then slice into thick planks. Marinate in soy sauce, smoked paprika and the juice of one lime for 10 minutes.

Heat a griddle or heavy frying pan with oil over a high heat. Grill the tofu planks for 3–4 minutes each side until charred grill marks form. Cut into chunks.

Cook the rice according to packet instructions. Drain and rinse the black beans and warm in a small pan.

Make a quick mango salsa by dicing the mango and mixing with finely sliced red chilli, lime juice and chopped coriander.

Serve the rice and black beans in bowls, top with the griddled tofu and mango salsa.
