Greek-style Butter Bean Burgers with Tzatziki

Ingredients

  • 400 g tinned butter beans
  • 60 g sun-dried tomatoes
  • 1 tsp dried oregano
  • 70 g breadcrumbs
  • 150 g Greek yoghurt
  • 1 cucumber
  • 1 clove garlic cloves
  • 4 ciabatta rolls
  • 2 tbsp olive oil

Method

    Drain and mash the butter beans until mostly smooth. Finely chop the sun-dried tomatoes and stir into the beans along with the oregano and breadcrumbs. Season and mix well.

    Shape into 4 patties and chill for 10 minutes.

    Make the tzatziki: grate the cucumber, squeeze dry, and combine with the yoghurt and crushed garlic. Season.

    Heat the olive oil in a non-stick frying pan over medium heat. Cook the patties for 4-5 minutes per side until golden and firm.

    Halve and toast the ciabatta rolls. Spread tzatziki on both halves, add the patty and top with sliced tomatoes if desired.
