Golden Fish Pie with Cheesy Mash Topping
Ingredients
- 300 g skinless salmon fillets, cubed
- 300 g smoked haddock, cubed
- 150 g raw king prawns
- 400 ml whole milk
- 100 g mature Cheddar, grated
- 900 g floury potatoes, peeled and chopped
- 60 g butter
- 40 g plain flour
- 100 g frozen peas
- 15 g fresh flat-leaf parsley, chopped

Preheat the oven to 200°C/fan 180°C. Boil the potatoes until tender, drain well and mash with half the butter and a splash of milk. Season generously.

Melt the remaining butter in a saucepan, stir in the flour and cook for 1 minute. Gradually whisk in the milk to make a smooth sauce, then simmer for 3 minutes until thickened.

Stir the parsley, frozen peas, salmon, haddock and prawns into the sauce. Season well and pour into a large baking dish.

Spoon the mash over the filling and spread evenly. Scatter over the grated Cheddar.

Bake for 25–30 minutes until the top is golden and the filling is bubbling at the edges. Rest for 5 minutes before serving.
