Method
- 1
Heat the oven to 200C (180C fan, gas 6). Blend half the ginger with the garlic, half the onion, 1 tbsp vegetable oil and 1 tsp salt. Slash the drumsticks and rub the paste all over; leave for 15 minutes.
- 2
Roast the chicken on a tray for 40-45 minutes, turning once, until browned and no pink remains near the bone.
- 3
For the kelewele, finely grate the remaining ginger and onion and mix with the cayenne, cloves and 1/2 tsp salt. Peel the plantains, cut into 2cm cubes and toss in the spice mix. Leave for 10 minutes.
- 4
Heat the remaining oil in a large frying pan over a medium heat and fry the plantain in two batches for 4-5 minutes, turning, until dark golden and caramelised. Drain on kitchen paper.
- 5
Slice the cucumber and tomatoes and squeeze over the lime with a pinch of salt.
- 6
Serve the ginger chicken with the hot kelewele and the salad.
