Estimated from typical values for each ingredient — a guide, not a substitute for the label on what you actually buy.

Method

  1. 1

Mix the garlic, ginger, kashmiri chilli powder, gram flour, mint and half the lime juice with 1 tbsp of the vegetable oil to a thick paste.

  2. 2

Coat the fish chunks in the paste and thread onto skewers, then rest for 15 minutes.

  3. 3

Brush with the remaining oil and grill under a hot oven grill, or on a griddle, for 6-8 minutes, turning carefully, until the fish flakes easily and is cooked through.

  4. 4

Squeeze over the remaining lime juice and serve with salad or rice.
