Method
- 1
Peel the plantains and cut into 1cm rounds. Heat 3 tbsp vegetable oil in a 24-26cm ovenproof non-stick frying pan over a medium heat and fry the plantain for 2-3 minutes each side until golden. Lift onto kitchen paper.
- 2
Add the remaining oil to the pan and fry the diced onion and red pepper for 5 minutes until soft.
- 3
Beat the eggs with the thyme, sliced spring onions and a good pinch of salt. Return the plantain to the pan, spreading it out evenly, and pour over the eggs.
- 4
Cook over a low heat for 8-10 minutes until the edges are set. Meanwhile, heat the grill to high.
- 5
Put the pan under the grill (keep the handle away from the heat) for 3-4 minutes until the top is golden and the centre is firm with no runny egg. Cut into wedges and serve warm.
