Method

  1. 1

Rub the lamb chops with the crushed garlic, 1 tbsp vegetable oil, 1 tsp salt and plenty of black pepper.

  2. 2

Heat the remaining oil in a frying pan over a medium heat and cook the thinly sliced onions for 12-15 minutes, stirring, until soft and golden. Stir in the mustard, vinegar, chilli flakes and 4 tbsp water, season and keep warm.

  3. 3

Heat the grill to high (or use a griddle pan). Grill the chops for 4-5 minutes each side until charred at the edges and cooked to your liking; this is how Dakar's dibiteries cook them over charcoal.

  4. 4

Rest the chops for 3 minutes, then cut the meat from the bone into bite-size pieces and toss with the mustard onions.

  5. 5

Serve with the crusty bread (a baguette is traditional), torn into chunks for scooping, and the sliced tomatoes sprinkled with salt.
