Crêpes Suzette

Ingredients

  • 120 g plain flour
  • 2 free-range eggs
  • 300 ml whole milk
  • 60 g unsalted butter
  • 2 oranges
  • 60 g caster sugar
  • 3 tbsp orange liqueur or orange juice

Method

    Whisk together the flour, eggs, milk, and a pinch of salt into a smooth batter. Rest for 10 minutes.

    Melt a little butter in a non-stick frying pan. Cook 8 thin crêpes, stacking them on a plate as you go.

    For the sauce, melt the sugar in a wide frying pan until golden. Add the remaining butter, the juice and zest of both oranges, and the orange liqueur. Stir to make a glossy sauce.

    Fold each crêpe into quarters and nestle them in the sauce. Warm through for 2 minutes, spooning the sauce over. Serve immediately, two crêpes per person.
