Creamy Tomato & Basil Pasta Sauce

Ingredients

  • 800 g tinned chopped tomatoes
  • 150 ml double cream
  • 1 onion
  • 3 garlic cloves
  • 2 tbsp tomato purée
  • 2 tsp dried basil
  • 1 tsp caster sugar
  • 2 tbsp olive oil

Method

    Finely dice the onion and mince the garlic. Heat the olive oil in a saucepan over a medium heat.

    Soften the onion for 6 minutes, then add the garlic and cook for 1 minute.

    Stir in the tomato purée, dried basil, and sugar and cook for 2 minutes.

    Add the tinned tomatoes, stir well, and simmer uncovered for 15 minutes until thickened.

    Stir in the double cream and season to taste. Cool before freezing.

    Note: freeze the sauce without pasta. Defrost, reheat gently, and toss with freshly cooked pasta to serve.
