Crab Sticks in Light Tempura Batter

Ingredients

  • 300 g crab sticks
  • 80 g plain flour
  • 80 g cornflour
  • 200 ml ice cold sparkling water
  • 3 tbsp soy sauce
  • 3 tbsp sweet chilli sauce
  • 3 spring onions
  • 700 ml sunflower oil

Method

    Separate crab sticks or cut into halves if large. Pat dry.

    Mix soy sauce and sweet chilli sauce together for the dipping sauce. Slice spring onions and scatter over.

    Just before frying, whisk plain flour and cornflour with ice cold sparkling water until just combined — a few lumps are fine for tempura batter.

    Heat oil to 185°C. Dip crab sticks in tempura batter and fry in batches for 2 minutes until light, crisp and barely golden.

    Drain on kitchen paper and serve immediately with the soy and chilli dipping sauce.
