Cod and Spinach Cheesy Pasta Gratin

Ingredients

  • 400 g cod fillets
  • 300 g macaroni pasta
  • 100 g baby spinach
  • 500 ml whole milk
  • 40 g plain flour
  • 40 g butter
  • 150 g mature cheddar
  • 40 g breadcrumbs

Method

    Preheat the oven to 200°C (180°C fan). Cook the macaroni for 2 minutes less than packet instructions, then drain.

    Place the cod fillets in a shallow pan, cover with half the milk and poach gently for 5 minutes. Lift out the fish, reserving the milk, and flake into large chunks.

    Melt the butter in a saucepan, stir in the flour and cook for 1 minute. Gradually whisk in all the milk (including poaching milk) to form a smooth sauce. Stir in most of the cheddar.

    Wilt the spinach in a colander with boiling water and squeeze dry. Fold the pasta, spinach and flaked cod into the sauce and tip into an ovenproof dish.

    Mix the remaining cheddar with the breadcrumbs and scatter over the top. Bake for 20 minutes until crisp and golden.
