Coconut Green Moong Dal

Ingredients

  • 300 g split green moong dal
  • 400 ml coconut milk
  • 4 clove garlic cloves
  • 25 g fresh ginger
  • 1 green chilli
  • 1 tsp ground turmeric
  • 1 tsp mustard seeds
  • 1 tsp dried curry leaves
  • 2 tbsp coconut oil
  • 1 lemon

Method

    Rinse the moong dal and place in a saucepan with 800 ml water and the turmeric. Bring to the boil and simmer for 25 minutes until completely soft.

    Stir in the coconut milk and simmer for 5 minutes until creamy and well combined. Season with salt.

    In a small pan, heat the coconut oil over a high heat. Add the mustard seeds and curry leaves and let them splutter for 30 seconds.

    Add the minced garlic, grated ginger and finely sliced green chilli. Fry for 2 minutes until golden.

    Pour this tempering over the dal and stir through. Squeeze in the lemon juice and taste for seasoning.

    Serve in bowls with steamed basmati or alongside coconut rice.
