Method

  1. 1

Heat 2 tablespoons of the olive oil in a large flameproof casserole and brown the chicken thighs, then lift out onto a plate.

  2. 2

Add half the sliced onions to the pan with the ground ginger and cook for 6 minutes, then return the chicken with the chicken stock. Cover and simmer for 30 minutes, until the chicken is cooked through with no pink remaining.

  3. 3

Meanwhile, heat the remaining olive oil in a separate pan and cook the rest of the onions with the ground cinnamon over a low heat for 15-18 minutes, stirring often, until deeply golden.

  4. 4

Stir the raisins and runny honey into the caramelised onions and cook for 2-3 minutes.

  5. 5

Put the couscous in a bowl, pour over 300ml just-boiled water, cover and leave for 5 minutes, then fluff with a fork.

  6. 6

Pile the couscous onto plates, top with the chicken and broth, and finish with the caramelised onion and raisin topping.
