Method
- 1
Make the kebab spice (tankora): blitz the peanuts to a fine powder, stopping before it turns to butter, and mix with the cayenne, ground ginger, cloves, garlic granules and 1 tsp salt. Soak wooden skewers in water if using.
- 2
Cut the lamb into 2.5cm pieces, toss with 1 tbsp oil and three-quarters of the spice, and leave for 10 minutes.
- 3
For the tomato rice, heat 2 tbsp oil in a pan, fry 1 chopped onion for 5 minutes, then stir in the tomato purée for 2 minutes. Add the rinsed rice, 600ml water and a pinch of salt, bring to the boil, cover and cook on the lowest heat for 15 minutes until tender.
- 4
Cut the second onion and the green pepper into 3cm pieces and thread onto the skewers, alternating with the lamb.
- 5
Heat the grill to high and grill the kebabs on a foil-lined tray for 10-12 minutes, turning every few minutes, until charred outside and cooked to your liking. Sprinkle with the remaining spice.
- 6
Serve the chichinga straight away on the tomato rice. Cool any leftover rice quickly.
