Cheesy Refried Bean Quesadillas

Ingredients

  • 400 g tinned refried beans
  • 4 large flour tortillas
  • 180 g mild cheddar cheese, grated
  • 100 g mild salsa
  • 100 g tinned sweetcorn, drained
  • 1 tsp ground cumin
  • 100 ml soured cream

Method

    Mix the refried beans with the ground cumin and sweetcorn in a bowl until combined.

    Lay a tortilla flat. Spread half of it generously with the bean mixture, then scatter over a quarter of the grated cheese. Fold the empty half over to create a half-moon. Repeat with remaining tortillas.

    Heat a large dry frying pan over a medium heat. Cook each quesadilla for 2–3 minutes per side until golden brown and the cheese has melted.

    Slice each quesadilla into three wedges and serve with salsa and soured cream on the side.
