  • 8 flour tortillas
  • 350 g cooked chicken breast
  • 150 g cheddar cheese
  • 1 red pepper
  • 150 g tinned sweetcorn
  • 1 tsp mild smoked paprika
  • 100 g soured cream

Method

    Shred the cooked chicken and finely dice the red pepper. Drain the sweetcorn.

    Mix the chicken, sweetcorn, red pepper and paprika together. Grate the cheddar.

    Spread the chicken mixture over four tortillas, scatter with cheese and top each with a second tortilla.

    Heat a dry frying pan over a medium heat. Cook each quesadilla for 2–3 minutes per side until golden and the cheese has melted.

    Slice into wedges and serve with soured cream and a simple salad.
