Cheesy Beef Tacos with Shredded Lettuce

25 min Serves 4 ~£6.50 (£1.63/serving) Kid-friendly

Ingredients

  • 500 g beef mince
  • 2 tbsp taco seasoning
  • 8 hard taco shells
  • 120 g mild cheddar cheese, grated
  • 150 g iceberg lettuce, shredded
  • 2 tomatoes, diced
  • 100 ml soured cream
  • 1 tbsp sunflower oil

Method

  1. 1

Heat the oil in a large frying pan over a medium-high heat. Add the beef mince and cook for 8–10 minutes, breaking it up with a wooden spoon, until browned all over.

  2. 2

Drain any excess fat from the pan, then sprinkle over the taco seasoning. Stir well and add a splash of water (about 3 tbsp). Cook for a further 2 minutes until the meat is coated and fragrant.

  3. 3

Warm the taco shells in the oven according to packet instructions, usually 3–4 minutes at 180°C.

  4. 4

Set out the filling ingredients in bowls on the table. Let everyone build their own tacos with the seasoned beef, grated cheddar, shredded lettuce, diced tomatoes and a dollop of soured cream.
