Cheese and Tomato Mexican Pizza on Tortillas
Ingredients
- 4 large flour tortillas
- 200 g mild salsa
- 200 g mild cheddar cheese, grated
- 150 g tinned sweetcorn, drained
- 150 g cherry tomatoes, halved
- 1 red pepper, thinly sliced
- 1 tsp mild smoked paprika
Method

Preheat the oven to 200°C (180°C fan) and place two large baking trays inside to heat up.

Lay the tortillas on a work surface. Spread each one with a generous layer of mild salsa, leaving a small border around the edge.

Scatter the sweetcorn, cherry tomatoes and red pepper slices evenly over each tortilla. Top generously with grated cheddar and a light dusting of smoked paprika.

Carefully slide the tortillas onto the hot baking trays and bake for 8–10 minutes until the cheese is bubbling and the edges are crispy.

Slice each tortilla pizza into wedges and serve immediately while hot and crispy.
