Method
- 1
Marinate the flank steak with the juice of 1 lime, the garlic cloves, ground cumin, chilli powder and 1 tablespoon of the olive oil for at least 15 minutes.
- 2
Make the pico de gallo by mixing the cherry tomatoes, red onion, coriander and the juice of the remaining lime.
- 3
Heat a griddle pan over a high heat and cook the steak for 3-4 minutes on each side for medium, then rest for 5 minutes and slice thinly against the grain.
- 4
Meanwhile, cook the long-grain white rice according to the pack instructions and warm the black beans.
- 5
Divide the rice and black beans between four bowls, top with the sliced steak and pico de gallo, and serve.
