Method

  1. 1

Cut the pork belly into large chunks and put in a pan with the ginger. Cover with water, bring to the boil and simmer for 10 minutes, then drain and rinse to remove scum.

  2. 2

Boil the eggs for 7 minutes, then cool under cold water and peel.

  3. 3

Return the pork to a clean pan with 2 of the spring onions, the soy sauce, mirin, sake, caster sugar and enough water to cover.

  4. 4

Bring to a gentle simmer, cover with a lid slightly ajar and cook on a low heat for 60-70 minutes, topping up water if it runs low, until the pork is so tender it falls apart with a spoon and no pink remains.

  5. 5

Uncover and simmer for a final 10 minutes to reduce the sauce until syrupy, adding the peeled eggs for the last 10 minutes to take on some colour.

  6. 6

Cook the sushi rice according to the pack.

  7. 7

Divide the rice between four bowls, top with the braised pork, a halved egg and a drizzle of the reduced sauce, and scatter with the remaining spring onions, sliced.
