Method

  1. 1

Peel and grate half the potatoes finely, and peel, chop and boil the other half for 15 minutes until tender, then mash.

  2. 2

Mix the grated and mashed potato together with the plain flour, whole milk and beaten eggs to make a thick batter, and season well.

  3. 3

Heat a little butter in a frying pan and spoon in the batter in rounds, cooking for 3-4 minutes on each side until golden and cooked through. Repeat to make eight boxty pancakes.

  4. 4

Meanwhile, fry the smoked back bacon rashers for 6-8 minutes until crisp.

  5. 5

Core and slice the apples and fry in a little butter for 4-5 minutes until softened and lightly caramelised.

  6. 6

Keep the boxty pancakes warm as you finish cooking them all.

  7. 7

Serve the boxty topped with the bacon and fried apple slices.
