Method
- 1
Slit each baby aubergine into quarters from the base, leaving them joined at the stem.
- 2
Mix the sattu with the minced garlic, chopped green chillies, ground turmeric, chilli powder, lime juice and 1 tbsp of the mustard oil to a crumbly paste.
- 3
Stuff each aubergine with the sattu mixture, reserving any spare.
- 4
Heat the remaining mustard oil in a wide pan and add the stuffed aubergines and any reserved filling.
- 5
Cover and cook over low heat for 20-25 minutes, turning occasionally, until the aubergines are tender.
- 6
Scatter with the chopped coriander and serve with rice or flatbread.
