Beef Pho with Star Anise Broth

Ingredients

  • 400 g beef sirloin
  • 300 g flat rice noodles
  • 1500 ml beef stock
  • 4 star anise
  • 1 cinnamon stick
  • 3 tbsp fish sauce
  • 40 g fresh ginger
  • 120 g beansprouts
  • 20 g fresh coriander
  • 2 red chilli
  • 2 lime

Method

    Pour the beef stock into a large saucepan. Add the star anise, cinnamon stick and sliced ginger. Bring to a simmer and cook for 30 minutes.

    Strain the broth through a sieve, discarding the spices. Return to the pan and stir in the fish sauce. Keep on a low heat.

    Soak the rice noodles in boiling water for 5 minutes, then drain and divide between four deep bowls.

    Slice the beef sirloin as thinly as possible (chilling it first helps). Lay the raw slices over the noodles.

    Ladle the very hot broth over the beef and noodles — the heat of the broth will cook the beef slices.

    Top with beansprouts, fresh coriander, sliced red chilli and lime wedges for squeezing over.
