Beef Mince Picadillo with Green Olives and Rice

  • 500 g beef mince
  • 300 g long-grain rice
  • 80 g green olives
  • 400 g tinned chopped tomatoes
  • 1 onion
  • 1 green pepper
  • 1 tsp ground cumin
  • 2 tbsp olive oil

Method

    Cook the rice according to packet instructions and keep warm.

    Dice the onion and green pepper. Heat the olive oil in a large pan and fry the onion for 5 minutes, then add the pepper and cook for 3 more minutes.

    Add the beef mince and brown well, breaking it up with a wooden spoon.

    Stir in the cumin and chopped tomatoes, season well and simmer for 15 minutes.

    Halve the olives and stir through the mince. Simmer for a further 5 minutes, then serve over the cooked rice.
