Beef Mince and Black Bean Chilli

Ingredients
- 400 g beef mince
- 400 g tinned black beans
- 400 g tinned chopped tomatoes
- 1 onion
- 3 clove garlic cloves
- 1 tsp chilli powder
- 1 tsp ground cumin
- 200 ml beef stock
- 1 tbsp sunflower oil
Method

Heat the oil in a large pot and fry the diced onion for 5 minutes until soft.

Add the beef mince and brown thoroughly, breaking it up as you go.

Stir in the crushed garlic, chilli powder and cumin and cook for 1 minute.

Pour in the chopped tomatoes and beef stock, then add the drained black beans.

Simmer uncovered for 20 minutes until rich and thick. Season and serve over rice with soured cream if you like.
