Beef Bolognese Pasta Bake

- 350 g penne pasta
- 400 g beef mince
- 400 g chopped tomatoes
- 1 onion
- 2 garlic cloves
- 2 tbsp tomato purée
- 125 g mozzarella
- 1 tbsp olive oil

Preheat the oven to 200°C (180°C fan). Cook the penne in salted boiling water for 2 minutes less than packet instructions, then drain.

Finely chop the onion and crush the garlic. Heat the oil in a large pan and fry the onion for 5 minutes until soft.

Add the beef mince and cook, breaking it up, until browned. Stir in the garlic and tomato purée and cook for 1 minute.

Add the chopped tomatoes, season lightly and simmer for 10 minutes until the sauce thickens.

Combine the pasta with the bolognese sauce in a large ovenproof dish. Tear the mozzarella over the top and bake for 20 minutes until golden and bubbling.
