Aduki Bean & Teriyaki Burgers

Ingredients

  • 400 g tinned aduki beans
  • 200 g cooked short-grain rice
  • 4 tbsp teriyaki sauce
  • 20 g fresh ginger
  • 2 tbsp sesame seeds
  • 4 burger buns
  • 1 baby gem lettuce
  • 2 tbsp sunflower oil

Method

    Drain and rinse the aduki beans. Mash roughly in a bowl, leaving some whole for texture. Grate the ginger finely.

    Combine the mashed beans, cooked rice, ginger, 2 tbsp teriyaki sauce and 1 tbsp sesame seeds. Mix well and season. The mixture will be sticky.

    With damp hands, shape into 4 patties. Chill for 10 minutes.

    Heat the oil in a non-stick pan over medium heat. Cook the patties for 4 minutes per side. Brush each patty with the remaining teriyaki sauce and scatter over the remaining sesame seeds. Cook for 1 minute more.

    Toast the buns and separate the baby gem leaves. Build the burgers with lettuce leaves for crunch and serve immediately.
