Vietnamese Peanut Sauce Noodles with Tofu (Mi Xao Lac)
Ingredients
- 250 g rice noodles
- 400 g firm tofu
- 4 tbsp smooth peanut butter
- 2 tbsp soy sauce
- 2 tbsp lime juice
- 1 tbsp sesame oil
- 2 clove garlic
- 2 red pepper
- 4 spring onions
- 50 g roasted peanuts
Method

Cook the rice noodles in boiling water for 3–4 minutes, drain and rinse under cold water.

Whisk together the peanut butter, soy sauce, lime juice, sesame oil, minced garlic and 3 tbsp warm water to make a smooth sauce.

Press and cube the tofu, then pan-fry in a little oil until golden on all sides.

Thinly slice the red peppers and spring onions.

Toss the noodles with the peanut sauce, then divide between four bowls.

Top with the crispy tofu, sliced peppers, spring onions and crushed roasted peanuts.
