Vada Pav with Green Chutney
Ingredients
- 700 g floury potatoes
- 150 g gram flour
- 1 tsp mustard seeds
- 1 tsp ground turmeric
- 2 green chillies
- 30 g fresh coriander
- 3 clove garlic cloves
- 4 soft white rolls
- 500 ml sunflower oil
- 1 lemon
Method

Boil potatoes until tender, drain and mash. Heat 1 tbsp oil in a pan, add mustard seeds until they pop, then add minced garlic, sliced green chilli and turmeric. Fry 1 minute, then stir into mash with salt to taste.

Blitz coriander, one green chilli, garlic clove and lemon juice with a splash of water to make a vivid green chutney.

Shape the mash into 4 equal balls.

Whisk gram flour with enough water to make a smooth, thick batter. Season with salt and a pinch of turmeric.

Heat the remaining sunflower oil in a deep pan to 175°C. Dip each potato ball into the gram flour batter and deep-fry for 3–4 minutes until golden and crisp. Drain on kitchen paper.

Split each roll, spread generously with green chutney, tuck in a vada and serve immediately.
