Tarte Flambée (Alsatian Flatbread)

Ingredients

  • 500 g ready-made pizza dough
  • 200 g crème fraîche
  • 150 g smoked lardons
  • 2 onions
  • 80 g Gruyère cheese
  • 1 tsp ground nutmeg
  • 1 tbsp olive oil

Method

    Preheat the oven to its highest setting (240–250 °C) with a large baking tray inside. Thinly slice the onions and fry in olive oil for 10 minutes until soft and golden.

    Divide the dough into two and roll each piece into a thin oval. Season the crème fraîche with nutmeg, salt, and pepper.

    Spread the crème fraîche thinly over each base. Scatter over the lardons, softened onions, and grated Gruyère.

    Slide onto the hot baking tray and bake for 10–12 minutes until the edges are crispy and charred in spots. Cut into pieces and serve immediately.
