Spicy Sichuan Pork Mince Noodles (Dan Dan Style)

Ingredients

  • 300 g medium egg noodles
  • 350 g pork mince
  • 2 tbsp chilli bean paste (doubanjiang)
  • 2 tbsp peanut butter
  • 2 tbsp soy sauce
  • 3 clove garlic
  • 4 spring onions
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil

Method

    Cook the noodles per pack instructions, drain and toss with sesame oil.

    Mix the peanut butter with 3 tbsp warm water and the soy sauce to make a smooth sauce.

    Heat the vegetable oil in a wok, add the crushed garlic and chilli bean paste, fry for 1 minute.

    Add the pork mince, breaking it up, and cook for 5–6 minutes until browned and fragrant.

    Toss in the noodles and pour over the peanut sauce, stir-frying over a high heat for 2 minutes.

    Serve topped with sliced spring onions and an extra drizzle of sesame oil.
