Spicy Egg Bhurji on Toasted Bread

Ingredients

  • 8 eggs
  • 8 thick white bread slices
  • 1 onion
  • 2 tomatoes
  • 1 green chilli
  • 1 tsp ground cumin
  • 0.5 tsp ground turmeric
  • 30 g butter
  • 15 g fresh coriander
  • 1 tbsp sunflower oil

Method

    Finely dice the onion and tomatoes and thinly slice the green chilli.

    Heat oil in a large non-stick pan over medium-high heat. Fry the onion for 4 minutes until softened and lightly golden. Add chilli, cumin and turmeric and fry for 30 seconds.

    Add chopped tomatoes and cook for 3 minutes, stirring, until they break down and the mixture is fairly dry.

    Beat the eggs lightly with a pinch of salt. Pour into the pan and stir continuously with a spatula, cooking for 2–3 minutes until just set but still slightly creamy. Stir in fresh coriander.

    Toast the bread and butter generously.

    Pile the egg bhurji onto the buttered toast and serve immediately.
