Spiced Minced Turkey Uttapam

Ingredients

  • 400 g minced turkey
  • 500 ml dosa batter (ready-made)
  • 1 red onion
  • 150 g cherry tomatoes
  • 1 green chilli
  • 2 tsp garam masala
  • 1 tsp ground coriander
  • 3 tbsp sunflower oil
  • 20 g fresh coriander
  • 3 clove garlic cloves

Method

    Heat 2 tbsp oil in a frying pan. Fry finely diced onion for 4 minutes. Add crushed garlic and sliced chilli and cook for 1 minute.

    Add minced turkey and fry over high heat for 8 minutes, breaking it up, until browned and cooked through. Season with garam masala, ground coriander and salt. Stir in fresh coriander and set aside.

    Halve the cherry tomatoes. Finely dice the remaining onion and chilli for topping.

    Heat a large non-stick frying pan over medium-high heat and brush with remaining oil. Pour in a ladleful of dosa batter and spread into a thick circle (about 15cm). Scatter over some cherry tomatoes and diced onion.

    Cook for 3 minutes until the base is set and golden. Spoon a quarter of the turkey mince on top, cover with a lid and cook for 2 more minutes. Repeat for all four uttapam.

    Serve immediately, mince-side up, with chilli sauce or coconut chutney alongside.
