Smoky Refried Bean and Cheese Flautas

Ingredients

  • 400 g tinned refried beans
  • 8 small flour tortillas
  • 150 g cheddar cheese
  • 1 tsp smoked paprika
  • 1 tbsp chipotle paste
  • 500 ml sunflower oil
  • 150 ml soured cream
  • 200 g cherry tomatoes
  • 15 g fresh coriander

Method

    Mix the refried beans with chipotle paste and smoked paprika. Season well.

    Warm the tortillas briefly so they are pliable. Spread a thin line of the bean mixture along the centre of each tortilla, top with grated cheddar, and roll tightly into a cigar shape. Secure with a cocktail stick.

    Heat the sunflower oil in a deep pan to 180°C. Fry the flautas in batches, seam-side down first, for 3–4 minutes until golden and crispy all over. Drain on kitchen paper.

    Halve the cherry tomatoes and toss with chopped coriander and a pinch of salt for a quick salsa.

    Remove the cocktail sticks from the flautas and arrange on a serving plate.

    Serve with the tomato salsa and soured cream for dipping.
