Sardines Plaki with Lemon and Bay Leaves

Ingredients

  • 800 g fresh sardines, gutted and cleaned
  • 2 white onion
  • 2 lemon
  • 4 clove garlic cloves
  • 6 fresh bay leaves
  • 4 tbsp olive oil
  • 150 ml dry white wine
  • 1 tsp dried oregano

Method

    Preheat the oven to 190°C (170°C fan). Thinly slice the onions and garlic and slice one lemon into rounds.

    Spread the onions across the base of a large baking dish and scatter over the garlic, lemon rounds, and bay leaves. Drizzle with half the olive oil.

    Lay the sardines on top in a single layer, season with salt, pepper, and oregano, then pour over the white wine and squeeze the juice of the remaining lemon.

    Drizzle with the remaining olive oil and bake for 25–30 minutes until the sardines are cooked through and the onions are soft.

    Leave to rest for 5 minutes before serving warm or at room temperature with bread and a green salad.
