Mango and Chickpea Amti Sweet-Sour Curry

Ingredients

  • 800 g tinned chickpeas
  • 1 ripe mango
  • 200 ml coconut milk
  • 1 white onion
  • 3 clove garlic cloves
  • 1 tsp ground turmeric
  • 1 tsp garam masala
  • 1 tbsp tamarind paste
  • 2 tbsp rapeseed oil
  • 300 g basmati rice

Method

    Cook the basmati rice according to packet instructions. Peel and dice the mango into small cubes. Finely dice the onion and mince the garlic.

    Heat the oil in a pan and fry the onion for 6 minutes until soft. Add the garlic, turmeric and garam masala and cook for 2 minutes.

    Add the drained chickpeas and stir to coat in the spices. Pour in the coconut milk and 100 ml water.

    Stir in the tamarind paste and half the diced mango. Simmer for 12 minutes until the sauce thickens.

    Taste and adjust the sweet-sour balance, adding a pinch of sugar if needed. Season with salt.

    Serve over basmati rice, scattered with the remaining fresh mango cubes.
