Kerala Beef Ularthiyathu (Dry-Fried Beef Curry)
Ingredients
- 700 g diced beef chuck
- 4 tbsp coconut oil
- 200 g shallots, finely sliced
- 6 clove garlic cloves
- 30 g fresh ginger, grated
- 2 tbsp Kerala garam masala
- 2 tsp Kashmiri chilli powder
- 40 g coconut flakes, lightly toasted
- 25 curry leaves
- 1 tsp ground black pepper

Combine the beef with the Kerala garam masala, chilli powder, black pepper and salt. Mix well and set aside for 15 minutes.

Place the beef in a saucepan with 300ml of water, bring to a boil, then simmer covered for 30 minutes until the beef is tender and the water has almost evaporated.

Meanwhile, heat the coconut oil in a wide frying pan. Add the curry leaves and shallots; fry for 10 minutes until the shallots are deep golden. Add the garlic and ginger; fry for 3 minutes.

Add the cooked beef to the frying pan and toss vigorously over a high heat for 5–7 minutes until the beef is nicely charred and dry-fried.

Scatter over the toasted coconut flakes and serve with appam or Kerala parotta.
