Green Tomatillo and White Bean Pozole-Style Bowl

Ingredients

  • 400 g tinned tomatillos
  • 400 g tinned white cannellini beans
  • 400 g tinned hominy or sweetcorn
  • 1 white onion
  • 4 clove garlic cloves
  • 1 fresh green chilli
  • 1 tsp dried oregano
  • 800 ml vegetable stock
  • 2 lime
  • 1 tbsp sunflower oil

Method

    Roughly chop the onion and blend with the tomatillos, green chilli and crushed garlic until smooth.

    Heat the oil in a large saucepan. Pour in the blended green sauce and cook over a medium heat for 5 minutes until it darkens slightly.

    Add the vegetable stock, dried oregano and drained hominy or sweetcorn. Bring to a simmer and cook for 15 minutes.

    Drain and rinse the cannellini beans and add to the pot. Simmer for a further 10 minutes until the broth is flavourful and everything is heated through.

    Season with salt and a generous squeeze of lime juice. Ladle into deep bowls and serve with lime wedges on the side.
