Gambas al Ajillo (Garlic Prawns in Olive Oil)
Ingredients
- 400 g raw king prawns, peeled
- 5 tbsp olive oil
- 6 clove garlic cloves
- 1 tsp dried chilli flakes
- 50 ml dry sherry
- 15 g fresh flat-leaf parsley
- 0.5 tsp sea salt
- 4 crusty bread, to serve

Thinly slice the garlic cloves. Roughly chop the parsley leaves.

Heat the olive oil in a wide, heavy frying pan over medium-high heat until shimmering. Add the garlic and chilli flakes and fry for 60 seconds until golden and fragrant — do not let it burn.

Add the prawns in a single layer and cook for 1 minute on each side until they turn pink and just opaque.

Pour in the dry sherry, let it bubble fiercely for 30 seconds, then remove from the heat. Season with sea salt.

Scatter over the parsley and serve straight away in the pan with crusty bread to mop up the garlicky oil.
