Ingredients

  • 320 g thin Korean buckwheat or wheat noodles (somyeon)
  • 3 tbsp gochujang paste
  • 3 tbsp rice wine vinegar
  • 2 tbsp sesame oil
  • 2 tbsp brown sugar
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 2 tbsp toasted sesame seeds

Method

    Cook the noodles in boiling water for 3–4 minutes until just tender. Drain and rinse thoroughly under ice-cold water until completely cold.

    Whisk together gochujang, rice wine vinegar, sesame oil and brown sugar to make the spicy dressing.

    Divide the cold noodles between four bowls.

    Top with julienned cucumber and carrot.

    Spoon the dressing generously over each bowl, sprinkle with sesame seeds and serve immediately. Encourage everyone to toss before eating.
