Chilli-Garlic Butter Corn Ribs with Cotija

Ingredients

  • 4 corn on the cob
  • 60 g unsalted butter
  • 3 clove garlic cloves
  • 1 tsp chilli flakes
  • 1 tsp smoked paprika
  • 80 g feta cheese
  • 2 lime
  • 15 g fresh coriander
  • 3 tbsp mayonnaise

Method

    Stand each corn cob upright and carefully cut each one into quarters lengthways to create 'ribs'. Use a sharp, heavy knife.

    Melt the butter with the crushed garlic, chilli flakes, and smoked paprika in a small pan.

    Brush the corn ribs generously with the chilli butter and arrange on a lined baking tray.

    Roast at 220°C (fan 200°C) for 20–25 minutes until the edges curl and caramelise.

    Mix the mayonnaise with lime juice and a pinch of salt.

    Arrange the corn ribs on a platter, drizzle with the lime mayo, crumble over the feta, and scatter with fresh coriander. Serve with lime wedges.
