Aloo Tikki with Spiced Lentil Topping

Ingredients

  • 700 g floury potatoes
  • 400 g tinned green lentils
  • 2 tsp chaat masala
  • 1 tsp cumin seeds
  • 2 tbsp tamarind paste
  • 1 red onion
  • 25 g fresh coriander
  • 1 green chilli
  • 4 tbsp sunflower oil
  • 1 tsp ground cumin

Method

    Boil the potatoes until tender, drain, mash and allow to cool. Season with chaat masala, cumin seeds and salt. Shape into 8 round patties.

    Heat 3 tbsp oil in a non-stick frying pan over medium-high heat. Cook the tikki patties for 3–4 minutes per side until deeply golden and crisp. Keep warm.

    In a separate small pan, heat 1 tbsp oil and add ground cumin. Add drained lentils with 3 tbsp water and chaat masala. Warm through for 3 minutes, seasoning to taste.

    Finely dice the red onion and slice the green chilli.

    Place two tikki patties per person in a shallow bowl. Spoon over the warm spiced lentils.

    Drizzle with tamarind paste and finish with red onion, sliced chilli and fresh coriander.
